Cheese and Onion Pie
3 lbs onions, sliced
Butter for frying
3 eggs
1 pint heavy cream
Salt & pepper to taste
A pinch of nutmeg (optional)
1/2 cup grated cheddar cheese
Pie pastry for a double crust pie
Fry the onions in butter. Allow to cool for a few minutes. Beat together eggs, and cream. Add in salt, pepper and nutmeg, Add the cheese. Line a deep pie plate with pastry. Add onion to the egg, cream, cheese mixture. Pour into the pie shell. Top with the top crust and bake at 350 degrees F. for 1 hour, or until crust is golden brown. Serves 6.
